Chicken Burgers w/ Red Pepper Mayo

Combine chicken, green onions, parsley, bread crumbs, red pepper, egg, salt and pepper in medium bowl. Form into 4 to 6 equal-size patties; set aside.

To prepare red pepper mayonnaise: place whole pepper on piece of foil, broil until blackened and blistered on all sides. Remove from oven and wrap in foil; set aside for 20 minutes. Remove foil, peel off blackened skin, remove seeds and membrane. Pat dry with paper towels. Put pepper and mayo in food processor and puree. Transfer to small serving bowl.

Heat butter or oil in large nonstick skillet over medium heat. Add patties and cook for 15 minutes, turning once or twice, or until cooked through. Transfer to warmed plates and garnish burgers with tomato and parsley. Serve with red pepper mayonnaise.
