Apple Tart

Cut 2/3 stick of cold butter into flour. Add one tablespoon sugar. Mix until butter is crumbled into flour. Mix in approximately 3 tablespoons water or just enough to hold dough together in a ball. Let dough rest a while in refrigerator.

Roll dough out thinly and place on cookie sheet. Halve, core and thinly slice apples. Take large slices of apple (from the center of the halves) and set aside. Take remaining apple trimmings and chop into small pieces. Place small pieces in center of dough leaving 1 1/2" of dough exposed on all sides. Neatly place remaining slices of apple in "flower" shape on top of the chopped apple pieces.

Roll exposed edges of the dough up over the apples.

Mix 2 tablespoons sugar with 1 tablespoon cinnamon. Sprinkle evenly over the apples and dough. Drizzle a tablespoon of honey over the apples. Cut a tablespoon of butter up and even distribute over apples.

Bake at 400° for at least one hour, or until very crisp, in the center of the oven.

Slice like a pizza and serve.
