Lime Cheesecake

Ingredients

• 1 1/2 cups graham cracker crumbs
• 1 cup sugar (approximately)
• 1/4 cup (1/8 pound) butter or margarine
• 2 - 8 oz packages neufchatel or cream cheese
• 1 cup sour cream
• 3 large eggs
• 1 tablespoon grated lime peel
• 1/4 cup lime juice
• 2 tablespoons all purpose flour
• Thin lime slices

Topping

• 1 cup sour cream
• 2 teaspoons each sugar
• 2 teaspoons lime juice

Directions

Mix crumbs, 2 tablespoons sugar and butter. Press over bottom and 1/2" up sides of 9" cheesecake pan with removable rim. Bake in 350 oven until lightly browned, approximately 10 mins. Beat cheese, sour cream, eggs, remaining sugar, peel, juice and flour until smooth. Pour into crust. Bake in 350° oven until center jiggles only slightly when pan is are gently shaken, approximately 35-45 minutes. Cool, spread with topping. Cover and chill until, at least 4 hours. Top with lime slices.

Makes: 12 - 16 servings.
