Combine first 5 ingredients in a medium bowl; mix well. Add apple stirring lightly to coat.
Combine egg and vanilla; add to apple mixture, stirring just until dry ingredients are moistened. Spoon mixture into a 9-inch pie plate coated with cooking spray. Arrange almonds as desired on top.
Bake at 350° for 30 minutes or until lightly browned. Serve plain or with cool whip.
