Barbecued Swordfish with Cilantro Dressing
Ingredients

2 1/2 lbs swordfish, cut into 6 steaks appx 1" thick, rinsed and drained

Marinade:

1/4 cup rice wine or sake

1 tablespoon minced fresh ginger root

2 tablespoons soy sauce

1 teaspoon dark oriental sesame oil

Cilantro Dressing:
-
3 tablespoons chicken broth or water
-
3 tablespoons soy sauce
-
1 tablespoon sugar
-
2 tablespoons dark oriental sesame oil

1 1/2 tablespoons rice wine or sake or 2 teaspoon rice-wine vinegar

2/3 cup loosely packed cilantro leaves, chopped
Directions
Place fish steaks in a a shallow dish. Mix marinade
ingredients, pour over fish and turn to coat. Marinate 20
mins at room temp, turning fish several times.
Meanwhile mix all Cilantro dressing ingredients.
Broil or grill fish 3-4" from heat source 4-5 mins per
side or until opaque in middle.
Transfer to serving dish, spoon dressing over fish and
serve immediately.
