Beer Battered Shrimp

Combine flour, egg yolks and one cup beer. Mix very thoroughly. Add pinch of salt and pepper. Mix batter until there are no lumps. Add second cup of beer and mix well. Stir in corn oil and curry powder. Mix well.

Beat the egg whites until "soft peaks" form. Add to batter and fold in gently and slowly.

Let batter stand for 20-25 minutes.

Batter shrimp or other items and deep fry in 350° oil until golden brown.

Mayonnaise Dip: Combine egg yolk, garlic, mustard and vinegar in bowl and mix well. Slowly drip in oil as mayonnaise is whisked quickly. Add tabasco to taste. Add chopped basil and mix.
