Chicken & Smoked Sausage Hash

Preheat oven to 475°

Heat oil in a large skillet with an ovenproof handle over medium high heat.

Season chicken with half the salt and half the pepper. Season onion and peppers with remaining salt and pepper.

Brown chicken in skillet, stirring for two minutes. Add sausage, onions and peppers and cook for 6 minutes, stirring constantly until vegetables are tender and golden. Add mustard and mix well. Add potatoes, brown and fold with the back of a spoon. Pat hash down; cook 2 - 3 minutes until potatoes are tender. Crack eggs on top, place skillet in oven and bake until eggs are set, about 3 minutes. Serve immediately.
