Chicken w/ Tomatoes, Olives & Parmesan

Place 24-inch-length aluminum foil on flat surface. In center, drizzle 1 tbs oil over area large enough to hold chicken. Make bed of tomato slices in center of oiled area. Top with chicken; season with 1/2 tsp each salt and pepper. Sprinkle with Parmesan, thyme leaves, thyme sprigs and olives.

Fold sides of foil over chicken; crimp edges together to seal, leaving plenty of room around the chicken.

Preheat large skillet over high heat for 1 minute. Add remaining oil, tilting to coat bottom with film; pour out excess oil. Place packet in skillet (it will sizzle.) After 2 minutes, packet will expand and puff. When packet has expanded, cook another 6 minutes. Remove packet from skillet; let rest 1 minute. Carefully slit packet open. Transfer chicken, tomatoes and olives to 2 dinner plates. Spoon juices over each serving.
