Lime Chicken

Directions

Cube chicken and marinate in lime juice for at least 15 minutes.

Julienne red pepper (1"x 1/4"), saute in large skillet in equal parts olive oil and butter. Add chopped garlic

Drain Chicken and add cubes to skillet. Sprinkle red pepper flakes evenly over chicken.

When chicken is completely cooked, add thickly sliced avocado and toss gently into chicken.

Add small portion of cornstarch and water to thicken skillet juices as needed.

Shrimp may be substituted for chicken, but do not marinate for longer than 10 minutes, as the lime juice "chemically" cooks the shrimp.

Serves: 4 to 6.
