Pork Jambalaya

1. Brown pork and sausage with olive oil in Dutch oven or very large covered pan 10-15 minutes. Salt and pepper to taste. Drain fat.

2. Add onion, peppers, celery, tomatoes, garlic and water to the meat. Cover and let simmer for 15 minutes on medium low heat.

3. Add rice, mix well. Add tabasco to taste (I used about 1 1/4 ounce and it was very spicy)

4. Cover and allow entire mixture to simmer on medium heat for 30 minutes, stirring occasionally. If rice is not quite cooked, allow a few more minutes on the heat.

Serves: 4-6
