Stew: 1. Brown pork in large pot. 2. Add remaining stew ingredients. Bring to a boil. Let boil for approximately 2 hours or until beans are done.
Rice: 1. Saute onion briefly in oil and butter. Add Annato Achiote to onions. 2. Add orange zest, pepper flakes, rice and salt to taste. Mix well, coating rice thoroughly with butter and oil. 3. Add water. Bring to boil and allow to cook for approximately 20 minutes.
Serve pork over rice. Garnish with chopped cilantro.
Take any leftover sauce from the pork, add leftover rice and some water. Blend in a food processor, adding water as needed for consistency. Garnish with croutons, onions or eggs for a tasty soup.
