Salmon Cakes w/ Cucumber Sauce
Ingredients

1 pound salmon, trimmed clean and coarsely hand chopped

5 chopped mushrooms

1/2 onion, chopped
-
Parsley, chopped
-
1 egg
-
Chives, chopped
-
3 tablespoons chicken stock
-
Fresh bread crumbs, approximately 2 slices

Sauce:
-
1 clove garlic, chopped
-
Chopped chives/scallion
-
1 medium sized cucumber, chopped
-
1/8 cup chopped red pepper
-
1 tablespoon salt
-
1/8 cup rice wine vinegar
-
1/4 cup water
-
1 tablespoon sugar
Directions
1. Cook chopped onion in skillet with small amount of water and dash of olive oil.
2. Add cooked onion, mushrooms, egg white, parsley, chives, chicken stock and break crumbs to salmon. Mix thoroughly together.
3. Form salmon mixture into patties and steam or saute for 10-15 minutes.
Sauce:
Mix all ingredients and set aside until salmon patties are finished cooking. Pour sauce over cooked patties.
