Salmon Cakes w/ Cucumber Sauce

1. Cook chopped onion in skillet with small amount of water and dash of olive oil.

2. Add cooked onion, mushrooms, egg white, parsley, chives, chicken stock and break crumbs to salmon. Mix thoroughly together.

3. Form salmon mixture into patties and steam or saute for 10-15 minutes.

Sauce: Mix all ingredients and set aside until salmon patties are finished cooking. Pour sauce over cooked patties.

Serves: 4
