1. Pan fry steak in live oil or canola oil. Remove from pan when finished but save juice in the pan.
2. In the steak pan, saute garlic, shallots and mushrooms until tender.
3. Add red wine, a dash of worcestershire sauce and chicken stock. Allow to heat slowly.
4. Add mustard and pepper to taste, stir quickly.
5. Add corn starch/water mixture to thicken as needed.
6. Pour sauce over steak and garnish with chopped chives.
