Tex-Mex Pork Stew
Ingredients

3 lbs boneless pork roast (or lamb or beef) cut into 1 1/2 to 2 inch chunks, trimmed of fat

2 cups broth

1 1/2 cup chopped onion

1 tablespoon minced garlic
Directions
Put all ingredients in a 4-5 quart pot, bring to
boil, cover tightly, reduce heat and simmer 2 1/2 hours or
until meat is tender.

1 - 17 ounce cans kernel corn,drained

2 - 15 ounce cans black beans, rinsed and drained

1 - 7 ounce can chopped green chiles

1/2 teaspoon each chili powder and dried oregano

1 - 8 ounce can tomato sauce

1 tablespoon all purpose flour
Add first four ingredients to stew. Whisk tomato sauce
with flour until blended. Stir into stew and simmer
uncovered 5-7 mins stirring occasionally until mixture
thickens. Garnish with tortilla chips, avocado, sour cream,
cheese, cilantro (any or all of the above).
