Curried Chicken Rice Salad
Ingredients

4 cups cooked chicken

1 box chicken flavored rice

1/2 bell pepper, diced

2 green onions, diced

8 pimento filled green olives, sliced

2 - 6 ounce jars artichoke hearts, save marinade

1/2 cup mayonnaise

1/2 teaspoon curry powder
Directions
Cook rice and cool in large bowl. Drain the marinade from
one jar of artichokes into rice. Add pepper, onion,
olives and artichokes and lightly toss.
Mix mayonnaise and remaining artichoke marinade with curry
powder and add to salad.
