Rice Spinach Salad
Ingredients

Make several hours ahead.

Salad:

3 cups cooked rice, HOT

2 cups packed, torn, fresh spinach

1 (11 ounce) can Mandarin oranges

1/2 cup blanched, slivered almonds, toasted

1/3 cup green onion, chopped

Dressing:
-
1/3 cup vegetable oil
-
1/3 cup white wine vinegar
-
2 tbs dry sherry
-
1 1/2 tbs soy sauce

3/4 tsp ground ginger
-
1 clove garlic, minced
Directions
Combine all dressing ingredients in a jar with a tight-fitting lid and
shake well.
Cook rice per package directions. Toss hot, cooked rice with dressing and
chill for several hours. Add remaining ingredients and toss.
