To blanch zucchini slices, place zucchini in boiling water for 1 minute, then rinse with cold water
In 10" skillet, crumble ground turkey; cook over medium heat until meat is no longer pink (10 mins). Stir in salsa, continue cooking until salsa is heated through. On each of the 4-6 dinner plates, arrange blanched zucchini slices around inside rim of plate. Spoon over turkey mixture. Arrange 5 avocado wedges across turkey. Sprinkle with cilantro, olives and cheese. Serve with blue corn chips.
