Baked Spinach and Artichokes

Heat oven to 350°. Microwave spinach according to package instructions; squeeze dry. Meanwhile, melt butter in large skillet on medium heat. Add scallions and cook 3 minutes or until softened. Add cooked spinach, artichokes, sour cream and 1/4 cup of the Parmesan cheese.; mix well. Spoon into a 1 1/2 quart baking dish coated with cooking spray. Top with remaining cheese. Bake 20 to 30 minutes or until bubbly.
