Chicken Corn Chowder Ole

1 teaspoon butter or margarine

1 small onion, chopped

2 pounds red potatoes cut into 1/2" diced

2 cloves minced garlic

2 cups (fat free) half and half or 2% milk

1 cup shredded Monterey Jack cheese

(I used Jarlsberg)

2 * 10-12 ounce cans chicken breast

(I boiled my own and diced up)

2 * 14 ounce cans cream style corn
-
1 * 4 ounce can of diced green chiles with juice

1/2 teaspoon hot sauce

1 teaspoon cumin
-
chopped cilantro
-
salt and pepper to taste
Directions
Combine butter or margarine, onion, potatoes and garlic and
microwave on high for appx. 6 minutes or until softened.
Spoon into a Dutch oven and add half & half or milk, cheese,
chicken, corn, chilies with liquid, hot sauce, salt, pepper and
cumin and heat on low, stirring often, for 15 minutes. Stir in
cilantro and serve immediately.
